Walnut and olive relish

Mix half a cup of chopped walnuts with one cup of chopped pitted green olives, two tablespoons of cold pressed walnut oil, two tablespoons chopped spring onions, one third of a cup of chopped parsley, one teaspoon of very finely chopped hot red chilli (no seeds), one tablespoon molasses, one tablespoon fresh lemon juice and half a cup of pomegranate seeds. Stir well and leave to rest overnight in the refrigerator. Serve with cold cuts.

You have to cry or laugh!

It is not easy to be a profitable walnut grower. A lot depends on climatic conditions. Wellwood has followed years of too little rain by too much rain in the period leading to the 2011 harvest. But it helps to retain your sense of humour.
