1 medium onion, chopped |
Recipe |
Place eggs, walnuts, onion, soy sauce and cottage cheese into a food processor and process until fine. Transfer the mixture into a bowl and mix in carrots, thyme, breadcrumbs and oats. Add more oats to thicken the mixture until it is firm. Cut pastry sheets in half and brush lightly with milk. Spoon six teaspoon full of mixture along one side of the pastry. Roll up pastry to enclose the filling. Brush with milk and cut into six even pieces and prick with a fork. Bake in a preheated oven (220°C) for 15 to 20 minutes or until crisp and golden. Mixture will make 6 x 6 rolls. |
Remarks |
Makes a delicious light lunch served with tomato relish and a tossed salad. For entertaining large numbers, can be made into tasty appetizers by cutting the pastry sheets into quarters and then each quarter into fours again. Place mixture into the centre, and seal edges.
